Breakfast Sandwich

Lately I've been eating so much Asian food, I woke up today craving a greasy sandwich.  Luckily, I had some cheddar cheese, bacon, and bread at home, so I made us a breakfast sandwich.

I started by making some pickled veggies, because the Asian in me likes some vinegary accompaniment that I can crunch on.  It's a very simple recipe, you just add 1:1:1 of sugar, salt and vinegar.  Then you can add any crunchy veggies you have.  I added 1/2 persian cucumber, 2 radish, 1 small carrot and 1/2 jalapeno to 1 Tablespoon each of sugar, salt, and vinegar.  Mix it all up and let it sit for about 20 minutes, just enough time for you to make the sandwich.

There isn't much to it, I melted some butter in a pan and added a couple of slices of bread.  When it was golden brown, I flipped them over, and I added cheese and bacon.  I had popped some bacon into the oven right before I started on the bread at 375 degrees for 15 minutes.  I like to bake bacon in the oven because it retains the shape while getting nice and crispy.

Once assembled, I put the sandwich together and added fried eggs on top.  The beauty of eating at home is you can add or subtract whatever you don't like, and since I love eggs, I added two on top (yea!).

Some chopped green onion, salt and pepper on the eggs, and voila, you are ready to eat.

A quick, delicious Sunday brunch at home while you are in your PJ's the whole time.  Add some yolk porn, and this is how I like to spend my Sunday morning!
