Easy Breakfast Sampler

I hope everyone is having a great weekend!

I love Sunday mornings. Today, I made a few bite sized toasts with different toppings.  Since I didn't want to actually cook anything, I figured different vegetables on top of toast or crackers would be perfect.

I bought this brioche toast from Trader Joe's, and I didn't even have to toast any bread. It's tasty, and it holds up well under different toppings.

While I was cutting up different vegetables, I boiled one egg. My favorite way to boil eggs is to place eggs in water, bring to a boil, and then turn off heat and let it rest for 6 minutes.

While the egg was cooking, I sliced up a cucumber, tomato, radish, and avocado.

First toast was cream cheese with sliced radish and salt and pepper on top. I added a sprinkle of dill for some color.

Second toast was sliced avocado with salt and pepper, with a dash of red chili peppers.

Third toast was smoked salmon with cream cheese, a little onion, and a sprinkle of dill.

Fourth toast was cream cheese with cucumbers and tomatoes with salt and pepper.

Last toast was boiled egg with salt and pepper. Dash of red chili peppers if you like a little heat.

With a side of yogurt and some fruit toppings, we had a wonderful Sunday breakfast. Except for boiling an egg, I didn't even have to use any heat. This is an easy way to impress someone on a weekend, since it makes such a colorful presentation. They don't need to know how quickly you put this together, they will just be impressed with all your efforts. Hope you all have a great Sunday!
