Asparagus, Prosciutto and Egg

Is it Sunday already? The weekend is almost over, but that means I have time to make a lazy breakfast at home! This is an easy brunch that anyone can make, and it has a pretty presenation if you want to impress someone.

You need to start by roasting 8-10 asparagus with some extra-virgin olive oil, salt, and pepper. Place it in the oven at 400 degrees for about 8 minutes. In the last 3-4 minutes, pop in 4 slices of prosciutto in the same oven to make it crispy and flavorful.

While asparagus and prosciutto are cooking, fry two eggs. I like to heat the pan on high heat, and once I crack the eggs in the pan, I lower the heat to medium low so that the eggs have a crispy edge but the yolk remains runny.

Toast couple of slices of bread, and assemble.

Layer the asparagus on the bottom, two slices of prosciutto slices, and an egg on top. I didn't put any salt on my egg since asparagus and prosciutto are already seasoned and salty. I did crack some pepper on top with a sprinkle of red chili peppers.

I also had some arugula that I placed on the side with some tomatoes. I kept it light by sprinkling a little salt and pepper with a squeeze of lemon juice.

You have the option of making hollandaise sauce to pour on top of the egg, but personally I don't like very heavy meals, and this is perfect for us. Obviously you can adjust the seasoning to your taste, and with a side of fruit, you have a well-balanced brunch at home. Asparagus, prosciutto, and egg- going APE has never been so delicious!
